Lower Carb Pumpkin Pie

  • Preheat your oven to 350F. 
  • In a food processor, add the ingredients for the crust. 
  • Mix until completely incorporated. 
  • Divide the crust into 4 portions and press into the bottom of 4 ramekins.
  • Add the ramekins to a sheet pan (for ease in and out of the oven).
  • Bake the crusts while you prepare the pie filling .
  • Into the food processor, add the ingredients for the filling. 
  • Process the filling until smooth.
  • Add the filling to the crust. 
  • Bake the pies at 350 F for about 35 minutes. 
  • Allow the pies to cool. 
  • Top with whipped cream.
