Homemade Pancake Mix

My husband and I eat a lot of pancakes! We eat even more when we have foster children living with us and when our nieces and nephew come to visit. This mix is super easy to make and very cost-effective. We continue to find ways to use it as the base for our favorite recipes.

Ingredients:

  • 7 1/2 cups all-purpose flour of choice
  • 5 tbsp baking powder
  • 1 tsp salt

Directions:

  1. Mix all ingredients in an airtight container
  2. When you think you are done mixing, mix some more!
  3. Store in a cool, dark, dry place. 
  4. Scroll down for ways to use this mix.

Pancakes:

  • In a small bowl, whisk together 1 cup milk + 2 egg + 2 tbsp granulated sweetener of choice + 1/2 tsp vanilla + 1/4 cup apple sauce or 2 tbsp melted butter. 
  • Once mixed, add 1 1/2 cups of the pancake mix. 
  • Adjust recipe with more milk or mix as needed.
  • Make pancakes on a seasoned skillet, non-stick pan, or buttered pan, as usual.

Waffles:

  • In a small bowl, whisk together 1 3/4 cup milk + 1 egg + 2 tbsp granulated sweetener of choice + 1/2 tsp vanilla + 1/4 cup apple sauce or 2 tbsp melted butter. 
  • Once mixed, add 1 1/2 cups of the pancake mix. 
  • Adjust recipe with more milk or mix as needed.
  • Make waffles on a non-stick or ‘buttered’ waffle iron, as usual.

Muffins:

  • In a small bowl, whisk together 1 cup milk +  2 eggs + 2 tbsp granulated sweetener of choice + 1 tbsp cinnamon + 1/2 tsp vanilla + 1/4 cup apple sauce or 2 tbsp melted butter. 
  • Once mixed, add 2 1/2 cups of the pancake mix. Mix well. 
  • Mix in 1 to 1 1/2 cups of your favorite mix-ins, such as fruit, nuts, chocolate chips, shredded veggies, etc.
  • Adjust the recipe with more milk or mix, as needed.
  • Once mixed, add to a non-stick or paper-lined muffin tin. 
  • Bake at 350F, until set. Timing will vary based on mix-ins and size of the muffins.
