Pickled Watermelon Rind

A delicious way to use up food scraps!

Ingredients:

  • The Rind of one small watermelon or 1/2 rind of 1 large watermelon
  • 3 cups apple cider vinegar
  • 2 1/2 cups water
  • 1 cup sweetener of choice
  • 1/4 cup pickling spice
  • 2-3 cinnamon sticks
  • Recipe can be doubled for more rind

Instructions:

  • Clean, peel, and chop watermelon rind into desired shape. 
  • In a small sauce pan, add vinegar, water, pickling spice, sugar, and cinnamon sticks.
  • Turn to low heat and simmer until all the sugar is dissolved. This should only take a few minutes.
  • Fill room temperature glass jar(s) with watermelon rind. Gently push the rind down to pack tightly into the jar(s).
  • Carefully pour hot pickling liquid over the rind. 
  • Loosely cover the jars with mason jar lids or keep the venting hole open, if applicable.
  • Allow the jars and contents to sit out at room temperature for about 1-2 hours.
  • Tighten the lid covers.
  • Store in the refrigerator. 
  • Allow to “pickle” for 1 day or until the desired pickle-ness is achieved! 
  • Enjoy! 
  • Eat these pickles within about 1 month.
