Sweet Potato Gnocchi

As you probably noticed in the full episode, we did not abstain from gluten in this meal, as the bread and cookies contained all-purpose wheat flour. So, why did I choose to make this recipe gluten-free? Scroll down or click here to learn more

  • Ingredients:
    • 4 cups almond flour 
    • 1 1/2 cups tapioca flour
    • 2 medium – large sweet potatoes, cooked
    • 2 eggs
    • 1/2 tsp salt
  • Yield:
    • This recipe makes 10-12 entree-sized servings
    • Please note: you can divide this recipe in half for a smaller batch. 

Instructions:

  • Mix all ingredients in a stand mixer.
  • Flour your work station and dump the pasta out onto it.
  • Knead the dough for 2-3 minutes until it is no longer sticky and comes together in a large ball. 
  • Add more almond and tapioca flour as needed in a 4:1 ratio.
  • Once the dough is ready, let sit for about 10-15 minutes.
  • Roll out a piece of dough into logs that are 1/2 inch in diameter.
  • Cut the log into 1-inch pieces.
  • Use a gnocchi paddle or fork to roll the gnocchi across to get ridges.
  • Repeat until all the dough is done.
  • As you make the pasta, lay it on a baking sheet pan to dry out overnight.
  • When you are ready to cook, bring a stock pot of water to a boil.
  • Drop 5-6 gnocchi into the water.
  • After they float to the top, use a slotted spoon to receive the gnocchi.
  • Drop cooked pasta onto a heat-resistant pan or dish and drizzle with olive oil.
  • Toss cooked gnocchi with olive oil to prevent sticking until you’re ready to add sauce and eat.
  • Repeat until all of the gnocchi are cooked.
  • Top with veggie fortified sauce.
  • Enjoy!
