Sweet Cinnamon Nuts

  • Ingredients:
    • 3 cups of walnuts (or nuts of choice)
    • 1/2 cup granulated sweetener (or sweetener of choice) – I used granulated stevia
    • 2 egg whites
    • 2 tsp vanilla extract
    • 1 tsp pumpkin or apple pie spice
    • 1 tsp cinnamon (or more as you like)
    • 1/8 tsp of salt

Instructions:

  • Preheat your oven to 350F.
  • In a large mixing bowl, whisk together egg whites and seasonings until frothy.
  • Add the nuts and mix to coat evenly with the egg white mixture. 
  • Pour in the sweetener of choice and mix to evenly coat the nuts.
  • Lay the nuts out in an even layer on a large baking sheet. I used my non-stick Orgreenic pan! If you don’t have this pan, use a parchment paper lining for easy cleaning.
  • Bake the nuts in 5-10 minute intervals, using a spatula to mix and flip between intervals.
  • Bake until the desired crispiness is achieved. My nuts took about 16 minutes.
  • Allow the nuts to cool before eating. 
  • Store in a tin container or paper baggie on the counter for 4-5 days or in the refrigerator for about 2 weeks.
    • I don’t recommend storing these in an airtight container as they may get soggy, but you definitely could!
