Pickle Marinated Chicken Tenders

You don't NEED air fryer!

Becuase you can “air fry” in the oven! Scroll down. 

  • Ingredients:
    • 1 lb chicken tenders
    • Pickle juice – whatever you have laying around! 
    • 2 cups oat or whole wheat cups flour, or flour of choices
    • 1 tsp salt
    • 2 tbsp paprika, divided
    • 1 cup cornmeal
    • 1 tbsp dried parsley
    • 1 tbsp Italian seasoning (I like Bragg’s Sea Kelp Seasoning)
    • Black pepper, to taste
    • 2-3 eggs
    • High-heat cooking oil
  • Instructions:
    • Marinate chicken for at least 1 hour.
    • Remove chicken from marinade and place on a paper towel to absorb any extra liquid. Pat the top of the tenders dry as well.
    • Preheat oven to 400. Cover a baking sheet with parchment paper. Place a cooling rack on top. (This works the same as an Air Fryer!)
    • Put flour in a bowl and mix in salt and 1 tbsp paprika.
    • Dredge chicken tenders in seasoned flour and place on the cooling rack/baking sheet.
    • Make the breading by using the bowl of leftover flour and mixing in cornmeal, 1 tbsp paprika, parsley, Italian seasoning, and pepper.
    • In a separate bowl, crack eggs and whisk together.
    • Dip each chicken tender in the egg wash and then the breading. Place on the baking sheet.
    • Use a glass spray bottle to spray tenders with high-heat cooking oil.
    • Bake until done (about 15-20 minutes.)
