Lemon Asparagus Hummus

Homemade hummus is way better than store bought!

  • Ingredients:
    • 1 15 oz can chickpeas, drained and rinsed well
    • 1/2 – 1 jar of Pickled Asparagus
    • 2 medium cloves garlic
    • 1/2 cup fresh parsley
    • 1/4 cup extra virgin olive oil
    • 2 tbsp tahini, sesame paste
    • 1 lemon, juice and zest
    • 1 tsp cumin
    • salt and pepper, to taste
  • Instructions:
    • Remove asparagus from jar and pat dry with a lint free towel or paper towel.
    • Add all ingredients to a food processor and process until smooth. (This makes lemon zesting super easy!)
    • Carefully remove from the food processor to a serving bowl.
    • Garnish with asparagus spears and a slice of lemon!
    • Serve as a Hummus Duo with Beet Hummus!
