4 cups water (use water from the boiled potatoes and then add more, if needed)
1 tsp vanilla extract
2 tsp honey or sweetener of choice
pinch of salt
Boil potatoes in water for 10-15 minutes, or until soft. Save the water!
Add potatoes to a blender along with 4 cups of water. First add the water that you used to boil the potatoes – and add more water as needed. (Use 4 cups of water per 1 cup of potatoes.) Blend until smooth.
Strain with a nut milk bag or cheesecloth. Save the pulp and add to a soup!
Mix in vanilla, honey, and a pinch of salt.
Store covered for up to 7 days.
