Potato Milk (make it yourself!)

A creamy homemade milk alternative!

  • Ingredients:
    • 1 cup Yukon Gold Potatoes
      • I would  not recommed Russet potatoes 
    • 4 cups water (use water from the boiled potatoes and then add more, if needed)
    • 1 tsp vanilla extract
    • 2 tsp honey or sweetener of choice
    • pinch of salt
  • Instructions:
    •  Boil potatoes in water for 10-15 minutes, or until soft. Save the water!
    •  Add potatoes to a blender along with 4 cups of water. First add the water that you used to boil the potatoes – and add more water as needed. (Use 4 cups of water per 1 cup of potatoes.) Blend until smooth.
    • Strain with a nut milk bag or cheesecloth. Save the pulp and add to a soup!
    • Mix in vanilla, honey, and a pinch of salt. 
    • Store covered for up to 7 days.
