(Brown) Banana Brownies

Don't waste your brown bananas!

  • Ingredients:
    • 3 brown banana
    • 1 cup monkfruit or granulated sugar 
    • 1 tsp vanilla extract 
    • 1 egg 
    • 3/4 cup almond butter – can swap in any butter you’d like
    •  3/4 cup cocoa powder
    • 1 tsp baking soda
    • 1/8 tsp salt
    • 1 tsp coconut oil or butter to coat baking dish.
    • Toppings! I think walnuts or chocolate chips are the most delicious. If you use shredded coconut, I’d recommend adding IN the batter as this may burn on top.
  • Instructions:
    • Preheat your oven to 350F. 
    • In a mixing bowl, use a fork to mash bananas.
    • Add vanilla, egg, and sugar and mix well.
    • Add almond butter and mix well.
    • Add cocoa powder, baking soda, and salt. 
    • Mix until combined. 
    • Use oil to ‘grease’ all sides of a 9×9 baking dish.
      •  Alternatively you could use cupcake papers and make smaller brownies – adjust the cooking time as needed.
    • Pour batter into the baking dish. 
    • Add toppings !
    • Bake at 350F for 35-45 minutes or so. Bake until center is set and toothpick comes out clean.
      •  Baking time will vary based on bananas and nut butter moisture content.
