  • Put your cashews in a bowl and cover you cashews with filtered water. 
  • Soak overnight or at least 8 hours. 
  • When you are ready to make the cheesecake, drain the excess water from the cashews. 
  • In a food processor, add the ingredients for the crust and process until it look like wet sand. 
  • Press the crust into the bottom of a pie plate. 
  • In the food processor, add the ingredients for the cheesecake and blend until smooth. 
  • Pour the filling into the pie crust and spread around easily. 
  • Let the pie set in the refrigerator for at least 4 hours. 
  • Top with a sprinkle pf pumpkin pie spice and whipped cream and enjoy!
