Each recipe makes 6 small popsicles.

I used (and LOVE) these popsicle molds.

Mango Mint:

  • 2 cups frozen mango
  • 1 cup Mooala milk (I used the banana but almond is great, too!)
  • 1 lime, juice and zest
  • 1/4 cup fresh mint leaf

Pineapple Coconut:

  • 2 cups fresh pineapple
  • 1 cup Mooala milk
  • 1/2 cup unsweetened shredded coconut
  • 1 tsp coconut extract

Chocolate Banana Nut Butter:

  • 2 bananas
  • 1 cup Mooala milk
  • 2 tbsp nut or seed butter of choice (*tip* make sure this has no added sugar or oils!)
  • 1/2 tsp vanilla extract
  • 1/2 cup chocolate chips (I used Lily’s)

*Hot Tip* While you are waiting for your popsicle molds to come in the mail – improvise with an ice cube tray and plastic spoons! 

Instructions:

  • For the mango mint:
    • Add mango, lime zest and juice, and Mooala into the blender and blend until pureed. 
    • Add the mint, and pulse until small flecks of green appear throughout the mixture.
    • If you puree it, it will still taste yummy but it will turn an odd, brown color. We eat with our eyes!
  • For the coconut pineapple:
    • Add the pineapple, Mooala, coconut extract into the blender and puree. 
    • Add the coconut shreds and pulse until desired consistency. I like mine a little more chunky and textured for this flavor!
  • For the chocolate, banana, nut butter:
    • Add the banana, vanilla, nut butter, and Mooala into the blender. 
    • Once your popsicles are frozen, you will add the chocolate. See below. 
  • Add your popsicle mixture into your clean molds. Fill each well up to the top. 
  • Add the popsicle handles into each well.
  • Place your popsicles into the freezer and freeze for at least 4 hours or until solid. 
  • For the mango mint and pineapple coconut flavors, they will be ready to eat as soon as you want! 
  • For the chocolate, nut butter, banana, it’s time for the chocolate! 
    • In a double boiler, melt the chocolate. Be sure to TEMPER your chocolate – either (1) melt until only half of the chips are melted, removed from the heat, and whisk until the rest melt, OR (2) melt half of your chocolate completely, quickly remove from the heat and add cool chips, whisk until it all melts. Once chocolate burns, it becomes dull, hard, and tough so it must be discarded. Your chocolate should stay glossy and smooth!
    • Drizzle chocolate over the popsicles. 
    • Allow chocolate to cool and eat!
