Quinoa Stuffing

This ‘stuffing’ will definitely be on our holiday table! What’s better, is that this hearty dish can be modified to include seasonal fruits and vegetables so it can be enjoyed – year round! Mix in your favorite grains, vegetables, or pops o fruit to make it your own unique masterpiece. 

I made something very similar on the TV show, Eat Your Way to Wellness, now, streaming! On the show, I used a mixture of quinoa and black rice. Black rice, also known as emperors rice is rich in antioxidants – almost as densley as blueberries!

Ingredients:

  • 4 cups cooked quinoa (or 2 cups quinoa + 2 cups black rice), cooked
  • 1-2 cup butternut squash, 1 inch cubes and roasted until fork tender
  • 1 medium diced red or sweet onion, sauteéd
  • 2 stalks celery, diced, sauteéd
  • 3 carrots, peeled, diced, sauteéd
  • 1 cup chopped kale, sauteéd
  • 1 cup pomegranate seeds (can swap In dried cherries if ponds aren’t available)
  • 3 sausage links, crumbled and sauteed, fat drained off (remove or use a plant based option if making the dish vegan/plantbased)
  • Dressing: 1 lemon juiced, 1 orange juiced, ½ cup EVOO, 1 tbsp ACV, 1/2 tsp himalyan salt, 1 clove minced garlic, 1 tsp dried sage, cracked black pepper to taste.

Instructions:

  • Meal prep your roasted squash. I roast mine with 1 tbsp olive oil at 400F for about 35 minutes, until caramelized and soft. 
  • For the sausage, onions, celery, carrot, I sauté together in the same pan. First, I sauté the sausage. Then using a slotted spoon, I remove the sausage, leaving behind the oil. I discard most of the oil in the trash, however, some is left behind to coat the bottom of my pan. I add the onions, celery, carrots and sauté for 8-10 minutes on low heat, until softened.
  • For the stuffing, mix the dressing together in a large bowl with a whisk. Add the ingredients to the bowl. Toss together and let sit overnight (if you are able). Serve a room temp.
