Lentil Pasta
(with Crispy Cheese Topping)

If you love crispy baked ziti corners, you’ll LOVE this crunchy cheesy pasta topping!
 

Ingredients:

  • 1 lb lentil pasta – I love the brand, Tolerant! You can find it on my Amazon storefront – scroll down for link! 
  • 4 cups marinara sauce of choice
  • 1-2 cubes of cheese of choice (I used organic, grass fed mozzarella)
  • 1/2 cup grated pecorino Romano cheese (can swap in parmesan)
Crispy Cheese Topping: 
  • 1 cup almond flour
  • 1 tbsp dried basil and parsley
  • 2 tsp garlic powder
  • 1/2 tsp himalayan salt
  • 1 tbsp olive oil
  • 1 cup cheese crisps – I used Sonoma Creamery parmesan crisps – they are lactose free for those who are lactose intolerant. 
 

Instructions:

  • Preheat the oven to 375 F.  
  • Cook lentil pasta short 1-2 mins from package directions.
  • Toss with half of marinara sauce and cubes of cheese.
  • Add to a baking dish or oven safe pan.
  • Top with remaining marinara. 
  • Sprinkle grated cheese evenly over the top of the pasta.
  • And now, for the topping…. mix ingredients in a food processor & process till crumbly.
  • Add Sonoma Creamery parmesan crisps.
  • Pulse until cheese crisps are broken up into small pieces. 
  • Sprinkle the topping over the pasta in an even layer.
  • Bake the pasta dish for 20-25 minutes or until topping is golden brown & pasta edges are bubbling.
  • EEAAAAATT!!!
