White Chicken Chili


  • 1 larged real sweet onion, small dice
  • 4 stalks celery, small dice
  • 2 green bell pepper, small dice
  • 4 – 4 oz chicken breasts, cooked and chopped up in to 1 inch cubes – can swap in raw chicken as it will cook in the chili cups
  • 6 cups bone broth or water
  • Spices:
  • 2 tbsp of my homemade taco seasoning
  • 2 tsp dried oregano

To Be Added Later During the Cooking Process:

    • 3 cups cannellini beans that were dry and soaked overnight in water – can swap in rinsed, canned beans (2 cans)
    • 1 cup organic, frozen corn


    • Add ingredients to slow cooker.
    • Cook all ingredients on high for 3 hours. If you added RAW chicken, ensure that it is cooked through!
    • Add beans and corn.
    • Cook for 1 more hour.
    • Top with avocado, dollop of plain, grass fed yogurt, guacamole, or fresh parsley or cilantro.
    • Add hot sauce or jalapeno peppers if you want it spicy!
