White Chicken Chili


  • 1 large real sweet onion, small dice
  • 4 stalks celery, small dice
  • 2 green bell peppers, small dice
  • 4 – 4 oz chicken breasts, cooked and chopped to 1 inch cubes – can swap in raw chicken as it will cook in the chili
  • 6 cups bone broth or water
  • 2 tbsp of my homemade taco seasoning
  • 2 tsp dried oregano

To Be Added Later During the Cooking Process:

  • 3 cups dried cannellini beans, soaked overnight in water (can swap in 2 cans of beans, rinsed
  • 1 cup organic frozen corn


  • Add ingredients to slow cooker.
  • Cook all ingredients on high for 3 hours. If you added RAW chicken, ensure that it is cooked through!
  • Add beans and corn.
  • Cook for 1 more hour.
  • Optional toppings: avocado, dollop of plain yogurt, guacamole, fresh parsley, cilantro, hot sauce, and/or jalapeno peppers.
