Slow Cooker Teriyaki Beef

Ingredients:

  • 2.5 – 3 lbs top round roast, grass fed, organic beef – I use Beaver Brook Ranch
  • 2 yellow onions, thinly sliced
  • 2 bell peppers, thinly sliced
  • 5 cloves garlic, minced, divided
  • 1/2 cup beef broth
  • 1/2 cup coconut aminos (it doesn’t taste like coconut!)
  • 1/4 cup water
  • 1/4 cup raw, organic honey
  • 1 1/2 teaspoons minced ginger
  • 1 teaspoon sesame oil

Instructions:

  • Turn on slow cooker to ‘high’ setting.
  • Add onions, 3 cloves minced garlic, and  peppers to the bottom.
  • Add beef.
  • Whisk together the rest of the ingredients and add to slow cooker, pouring over the beef.
  • Cover and cook for 6 hours, occasionally mixing if possible.
  • Shred and serve over rice or cauliflower rice.
