Mango Ginger Salsa

Ingredients:

  • 1 cup chopped mango (can swap in pineapple)
  • 2 tbsp fresh grated ginger 
  • 1/4 cup finely diced red onion or real sweet onion
  • 1/4 cup finely diced red bell pepper
  • 1/4 cup chopped fresh cilantro or parsley
  • 1 lime – zest and juice 
  • 1/4 tsp pink salt

Instructions:

  • Dice all ingredients to 1/4 inch dices or smaller.
  • Mix all ingredients in a large bowl.
  • Eat immediately.
  • Enjoy within 2-3 days. Safely, it will last up to 5-7 days but after 2-3 days, it will become soggy.
