Mango Ginger Salsa


  • 1 cup mango, chopped (can swap in pineapple)
  • 2 tbsp fresh ginger, grated 
  • 1/4 cup red onion or real sweet onion, finely diced
  • 1/4 cup red bell pepper, finely diced
  • 1/4 cup fresh cilantro or parsley, chopped
  • 1 lime, zest and juice 
  • 1/4 tsp pink salt


  • Dice all ingredients to 1/4 inch dices or smaller.
  • Mix all ingredients in a large bowl.
  • Eat immediately.
  • Enjoy within 2-3 days. Safely, it will last up to 5-7 days but after 2-3 days, it will become soggy.
