Mango Ginger Salsa
Ingredients:
1 cup chopped mango (can swap in pineapple)
2 tbsp fresh grated ginger
1/4 cup finely diced red onion or real sweet onion
1/4 cup finely diced red bell pepper
1/4 cup chopped fresh cilantro or parsley
1 lime – zest and juice
1/4 tsp pink salt
Instructions:
Dice all ingredients to 1/4 inch dices or smaller.
Mix all ingredients in a large bowl.
Eat immediately.
Enjoy within 2-3 days. Safely, it will last up to 5-7 days but after 2-3 days, it will become soggy.
