Sugar Free Banana Muffins

Why sugar free, you ask ? Well sugar is a common food additive. It is found in almost EVERYTHING ranging from spices blendd, pickles, dressings … To cookies, gums, and breads… To yogurt or milk! Sugar can effect mood, gut microorganism balance, joint pain, inflammation, and weight gain, cardiovascular status, and so much more! And remember, sugar isn’t just HFCS or came sugar… It’s ALL added sugar … Honey, agave, coconut, etc.

Ingredients:

 

  • 2 masked bananas (about 1 cup)

  • 1/2 + 1 tbsp cup melted coconut oil (or avocado oil)

  • 2 eggs

  • 1/2 cup milk o f choice

  • 2 cups chickpea or coconut flour

  • 1/2 cup old fashioned GF oats

  • 2 tsp stevia

  • 2 tsp cinnamon

  • 1 tsp baking powder

  • 1/4 tsp salt

Instructions:

  • Preheat oven to 375 F

  • Add cupcake paper to 24-well muffin pan

  • In a large mixing bowl, mx all ingredients except 1 tsp stevia, 1 tbsp oil, and the oats

  • Add batter to each muffin well as evenly as possible so all muffins are the same size

  • In a separate bowl, mix 1 tsp stevia, 1 tbsp oil, and oats until it is a crumble texture

  • Crumble the crumbled on top of muffins… you can make more crumble as desired =)

  • Bake for about 20 mins

  • Cool and eat!
