Add chicken, 1 cup broth, onions, and garlic to covered casserole dish or slow cooker and cook until chicken is falling apart.
As a time saver – you could use a pre-made rotisserie chicken or leftover chicken!
Once chicken is cooked, use two forks to shred. Shred the onions and garlic right into the chicken. It should be very soft
In a food processor, add beans/hummus, milk, yogurt, spices, hot sauce and process until smooth. Add more milk as needed. If using hummus, you may be able to use a whisk for this step.
Add chicken to a casserole dish.
Pour “cream” over the chicken and toss to coat.
Use a spoon or spatula to spread the chicken mixture evening in the casserole dish.
In a small bowl, add topping ingredients and mix until the topping looks like wet sand.
Sprinkle liberally around the casserole.
Bake at 235F until topping is golden brown and casserole is bubbling.
Alternatively, instead of baking, you could add all the ingredients to a crockpot and cook on high until desired doneness, then turn to ‘keep warm’ setting to keep the dip warm for the entire game!
Serve with whole grain bread, crackers, or corn tortillas!
