Salmon Burgers

  • Ingredients:
    • 2 – 4 oz salmon filets, cooked
    • 1/4 cup flour and more as needed (I used cassava)
    • 1 egg
    • 1/4 cup ground flax
    • 1/2 onion, diced, any variety you prefer
    • 1 tsp old bay seasoning
    • 1 garlic clove
    • Salt and pepper to taste
    • 1 tbsp olive oil, avocado oil, or butter to cook patties
  • Instructions:
    • Cook your salmon filets or use leftovers.
    • In a food processor, add the onion and garlic and process until finely diced.
    • Add egg, ground flax, onion, and seasoning to a food processor
    • Add salmon. Pulse until combined but still chunky.
    • Add flour. Pulse until batter forms. Add more flour, 1 tbsp at a time, if needed, to form the patties.
    • Form 4 patties.
    • Pan fry in olive oil until brown and cooked through.
      • Optional baking if you prefer, add patties to a parchment lined baking sheet and bake t 400F until cooked through, about 15-20 minutes  
    • Serve on a toasted bun with your favorite toppings. I love lettuce, tomato, pickles, roasted red peppers, and Vegan Green Pea Pesto. Can also be served with a salad!
