Purslane and Pea Gazpacho

First of all – WHAT IS PURSLANE? This may not be something you’re familiar with.. or it may be something you are VERY familiar with .. it may be something you’re familiar with but you DON’T know you are familiar with. Let me explain. 

This common weed is something that grows all OVER my backyard.  And, interestingly it is quite nutritious. It contains the HIGHEST amounts of Vitamin A per unit as compared to other leafy green vegetables, is one of the most rich leafy green sources of Omega3 fats, and is very dense in potassium, magnesium, calcium, and phosphorous.

  • I personally avoid picking produce if I know there are pesticides, herbicides, or chemicals that could have gotten on to the plant. We don’t use those items in our lawn or garden and neither do our adjoining neighbors.  
  • NEVER consume anything from your lawn or garden that you are now 100% sure if safe. Learn how to identify your plants correctly – here is a starting point for your research. 

Ingredients:

  • 2 cups sugar snap peas removed from the pods
  • 1 cup common purslane
  • 1 cup cucumber 
  • 1 avocado 
  • 1 green bell pepper
  • 4-5 green onions
  • 1 bunch fresh mint
  • 1 lemon, juice and zest
  • 1-2 cloves garlic
  • 1/4 tsp salt 
  • optional – 1 jalapeno or serrano chile if you like spice
  • optional – 1/2 cup plant milk if you prefer the soup more creamy
  • Garnish – herbs, chopped almonds or hemp seeds, lemon zest 

Instructions:

  • Blanch the peas in boiling water for 1-2 minutes, until their peas are bright green then plunge them into an ice water bath to stop the cooking process. 
  • Add all of the ingredients into a food processor or blender
