Yogurt Tzatziki

This is one of the episodes I shared in my TV show episode on HIGH BLOOD PRESSURE. High blood pressure if one of diagnoses under the umbrella of hear disease. Heart disease is the LEADING causing of death of both men and women worldwide.
 
Try this sauce drizzled over my veggie skewers with red lentil salad.
 

Ingredients:

  • 2 cups plain yogurt, drained *see below
  • 1 cup peeled and shredded, cucumber, drained *see below
  • 2 cloves minced garlic, grated
  • 1 lemon, juice and zest 
  • ¼ tsp pink salt

Instructions:

  • Take 2 bowls and add two fine strainers so they sit inside the bowl without touching the bottom of the bowl. Drain the yogurt in one bowl and cucumber in the other bowl to remove excess water.
  • Line the fine strainer with a cheesecloth, nut milk bag, lint-free dinner napkin, or coffee filter.
  • Allow the cucumber and yogurt to drain for as long as possible (ideally overnight.)
  • In a large mixing bowl, add the drained yogurt and cucumber.
  • Add lemon juice, zest, salt, and garlic.
  • Grate garlic using a microplane or grater.
  • Mix together.
  • Use over salads, sandwiches, or any dish. You can even use it as a chicken marinade!
