Fudgy Brownie Baked Oatmeal

Make this for a more ‘heart healthy’ dessert option or for a new breakfast idea because sometimes you need to get out of your breakfast rut! 

Please note: this is not an overly sweet recipe. For more sweetness, add more sweetener of choice or top with fresh berries.

Ingredients:

  • Wet ingredients
    • 1/2 cup unsweetened applesauce
    • 1 1/2 cups milk of choice 
    • 2 eggs
    • 1 tbsp vanilla
    • 1/4 cup sweetener of choice – I used monk fruit
  • Dry Ingredients:
    • 1 1/2 cups oats, processed into flour
    • 1/2 cup cocoa powder
    • 1 tsp baking soda
    • 1/2 tsp salt
  • Optional toppings for baking: chocolate chips, walnuts, coconut 
  • Optional toppings for serving: berries, whipped cream

Instructions:

  • Preheat oven to 350F.
  • Process oats into a flour in a food processor.
  • Take out a 12×12 nonstick baking pan or prepare an alternate baking dish by lining it with parchment paper.
  • Mix all of the wet ingredients in a small mixing bowl.
  • Mix all of the dry ingredients in a separate mixing bowl.
  • Add the wet ingredients to the dry ingredients.
  • Mix to combine.
  • Add to baking pan.
  • Optional: add toppings for baking.
  • Bake for about 20 minutes, or until set.
  • Top with berries and whipped cream, as desired.
  • Enjoy!
