Half-the-Meat Meatballs with Veggie Marinara

  • Ingredients for Meatballs:
    • 1/2 lb ground beef
    • 1/2 lb ground pork sausage
    • 2 cups cooked lentils (1 cup raw)
    • 2 eggs
    • 1/2 cup grated pecorino romano
    • 1 1/2 cups processed oats plus more as needed (in place of breadcrumbs)
    • 1 small onion or 1/2 medium onion, diced
    • 1 tsp dried basil
    • 1 tsp dried parsley
    • 1 tsp dried oregano
    • 1 tsp garlic powder
    • salt and pepper to taste

Instructions:

  • Cook lentils in 2 cups of water on low heat until softened.
  • Dice the onion.
  • Sauté the onion for 5-6 minutes on low heat until it is soft and caramelized. I like to use my Orgreenic Saute Pan
  • While the onion cooks, make oat breadcrumbs
    • In a food processor, add the oats and spices.
    • Pulse to make “breadcrumbs.”
  • In a large mixing bowl, add meat (beef and insides of sausage links).
  • By this time, your onions should be done. Let them cool and add to the meat mixture. 
  • Add oat crumbs to the meat.
  • Add the lentils to the food processor and pulse to puree (a few chunks are okay). 
  • Add the lentils to the meat mixture.
  • Crack eggs into a small bowl off to the side and add to the meat mixture. This prevents shells or rotten eggs from disturbing your main meatball mixture. (By the way, do you follow my chickens on TikTok!?)
  • Mix with clean hands.
  • Use an ice cream scoop to make meatballs. This ensures an even size.
  • As you roll the meatballs, lay them out on a sheet pan. 
  • Once you are done making meatballs, it’s time to cook!
  • I used the same Orgreenic sauté pan to cook my meatballs.
  • Pan-sear the meatballs until they reach an internal temperature of 160F if cooking fully. I like to sear the outside of my meatballs and finish cooking them in the marinara sauce.
