Dairy Free Penne alla Vodka

Ingredients:

  • 1 small onion, diced
  • 3 cloves garlic
  • 2 tbsp olive oil
  • 3 -24 oz jars of pureed tomatoes
  • 2 tsp dried oregano
  • 1 tsp dried parsely
  • 1 cup fresh basil
  • 1/2 tsp pink salt
  • 1 cup cashews, soaked for 4 hours
  • 1 cup plant based milk
  • 1 cup vodka

Instructions:

  • In a large sauce pot, saute onion on low heat for 12-15 minutes.
  • Add garlic, oregano, and parsley and saute for 4-5 minutes.
  • Add pureed tomatoes.
  • Add 1/4 cup water to each tomato jar and shake to release remaining tomatoes.
  • Pour into sauce pot.
  • Simmer for 20 minutes on low heat.
  • Puree cashews in a food processor .
  • Add vodka, cashews, milk and simmer sauce for an additional 20 minutes.
  • Add basil.
  • Serve with pasta of choice
