Mama DeLuise's Meatballs

Ingredients:
2 lbs grass fed & finished beef – I use this one >
Beaver Brook Ranch
4 eggs, scrambled
1 cup hard, aged cheese
3/4 cup chickpea flour
1/4 cup fresh parsley * optional
2 tsp onion powder
2 tsp garlic powder
2 tsp oregano
1/2 pink salt
2 tbsp avocado oil – for frying
Makes about approx. 35 meatballs
Instructions:
In a large mixing bowl, mix all ingredients until they are combined.
Take an ice cream scoop and make “balls” of meat. Lay them out on a large sheet pan.
Warm a large sauce pan to low heat with avocado oil.
Add 5-6 meatballs into the pan and cook on one fside for 4-5 minutes. Carefully flip them and add cook for 4-5 minutes on the opposite side.
Once they are done, remove the meatballs and let them rest on a different tray or pan.
Add 5-6 additional to the pan and repeat.
When all of the meatballs are seared. Add them to a pot of marinara sauce.
Simmer for 20 minutes until the meatballs are cooked through, and they reach 165 F degrees.
