Whisk chia seeds, vanilla, and milk together.
Divide chia seeds into 4-6 containers. Let sit for at least 4 hours until the mixtures are thickened.
In a saute pan, sautée apples in coconut oil and spices on low until apples are tender and begin to break down.
Use a potato masher to break up the apple mixture.
Top each chia seed pudding with apples.
Serve warm or at room temperature.
