Apple Pie Vanilla Chia Seed Pudding

Ingredients:

  • 2 cups chia seeds
  • 2 cups milk of choice
  • 1 tsp vanilla extract
  • 1 tsp stevia

 

Topping:

  • 2 apples, iced
  • 1 tbsp coconut oil
  • 2 tsp apple pie spice

Instructions:

  • Whisk chia seeds, vanilla, and milk together.
  • Divide chia seeds into 4-6 containers. Let sit for at least 4 hours until the mixtures are thickened.
  • In a saute pan, sautée apples in coconut oil and spices on low until apples are tender and begin to break down.
  • Use a potato masher to break up the apple mixture.
  • Top each chia seed pudding with apples.
  • Serve warm or at room temperature.
