'Skin Health' Popsicles

Have you seen the trend on social media – eat your carrots and you’re eating your retinol!? Well, this isn’t entirely accurate.  HOWEVER, that doesn’t mean that carrots and other beta-carotene-rich foods don’t play a role in skin health. Beta-carotene, found richly in foods likes carrots, bell peppers, pumpkin, sweet potatoes, and many more, is converted to Vitamin A (retinol) in the body. And while it is not the same as topical retinoid, it does support healthful skin and eyes, among other body parts and systems. That is why I have the title as ‘skin health’. 

But, either way, what a great, fun way to eat your veggies, right!? Give them a try!

Yield – about 6 popsicles 

Ingredients:

  • 1 cup Greek yogurt (or dairy-free yogurt alternative)

  • 7-8 medjool dates + 1/2 cup water

  • 3/4 cup steamed carrots (or very finely grated raw)

  • 3/4 cup pumpkin puree

  • 1/4 cup milk of choice (more as needed to blend)

  • 1 tsp vanilla extract

  • ½ tsp cinnamon

  • Pinch of salt

  • For the Shell (optional):

    • 1 cup dark chocolate chips – I used the stevia sweetened ones

    • 1 tbsp avocado oil or neutral-tasting cooking oil

Directions:
  1. Wash and dry silicone popsicle molds.

  2. Soak medjool dates in water for 3-4 hours to soften them.
  3. Add all of the popsicle ingredients to a blender (including the date water) all of the ingredients for the popsicles. 
  4. Blend until smooth, about 1 minute.
  5. Fill the popsicle mold wells evenly. This should be enough for 6 mid-size pops and 8-10 smaller pops. 
  6. Add the popsicle ‘stick’ to the wells. 
  7. Freeze popsicles in an upright position until solid, about 6 hours or overnight. 
  8. When you are ready to coat the popsicles in chocolate, complete the following steps. If you don’t plan on coating the popsicles, skip to step 13.
  9. In a double boiler (I use this one), melt the chocolate and oil (Here is a quick video on how to melt chocolate properly from my YouTube Channel).
  10. Set up a sheet pan with a cooling/ drip rack on top to place popsicles once they are coated with chocolate. 
  11. Once the chocolate is melted, shut off the heat to the double boiler. 
  12. Carefully use a spatula to coat each popsicle with chocolate in all sides. I complete this step by holding each popsicle by the stick over the double boiler.
  13. Once coated, lay the popsicle onto the cooling rack. 
  14. Once the chocolate has completely hardened (about 3 minutes), add the popsicles to a freezer safe storage bag or container (I have been loving these silicone, reusable baggies recently).
  15. Store in the freezer for 1-2 months. 
  16. Enjoy!
