Have you seen the trend on social media – eat your carrots and you’re eating your retinol!? Well, this isn’t entirely accurate. HOWEVER, that doesn’t mean that carrots and other beta-carotene-rich foods don’t play a role in skin health. Beta-carotene, found richly in foods likes carrots, bell peppers, pumpkin, sweet potatoes, and many more, is converted to Vitamin A (retinol) in the body. And while it is not the same as topical retinoid, it does support healthful skin and eyes, among other body parts and systems. That is why I have the title as ‘skin health’.
But, either way, what a great, fun way to eat your veggies, right!? Give them a try!

Yield – about 6 popsicles
Ingredients:
1 cup Greek yogurt (or dairy-free yogurt alternative)
7-8 medjool dates + 1/2 cup water
3/4 cup steamed carrots (or very finely grated raw)
3/4 cup pumpkin puree
1/4 cup milk of choice (more as needed to blend)
1 tsp vanilla extract
½ tsp cinnamon
Pinch of salt
For the Shell (optional):
1 cup dark chocolate chips – I used the stevia sweetened ones
1 tbsp avocado oil or neutral-tasting cooking oil
