Whole Roasted Lemon Herb Chicken

This lemon and herb chicken is juicy, flavorful, and satisfying!

Ingredients:

  • 1 Whole Chicken
  • Spice Rub:
    • 1 tbsp dried sage
    • 1 tbsp dried rosemary
    • 1 tsp pink salt
  • 2 lemons, sliced

Instructions:

  • Preheat your oven to 375F.
  • In a small glass bowl, mix the spices.
  • Put on disposable gloves. Carefully with 1-2 fingers, lift the skin away from the chicken flesh, creating a pocket to stuff the herbs and lemon.
  • Add the herbs and lemon slices under the chicken skin.
  • Add chicken to a roasting rack.
  • Cook for 45-55 minutes or until the internal temperature reaches 165F.
