Whole Roasted Lemon Herb Chicken

This lemon and herb chicken is juicy, flavorful, and satisfying!

  • 1 Whole Chicken
  • Spice Rub: 1 tbsp dried sage, 1 tbsp dried rosemary,
  • 1 tsp pink salt
  • 2 lemons, sliced


  • Preheat your oven to 375 degrees Fahrenheit.
  • In a small glass bowl, mix the spices.
  • Put on disposable gloves. Carefully with 1-2 fingers, lift the skin away from the chicken flesh, creating a pocket to stuff the herbs and lemon.
  • Add the herbs and lemon slices up and under the chicken skin
  • Add chicken to a roasting rack.
  • Cook for 45-55 minutes until the internal temperature reaches 165F.
