GF Sweet Potato Gnocchi
THIS IS MY FAVORITE RECIPE! YUM!

2 cups almond flour + extra for flouring your table
2 med sweet potato cooked to soft – MEAL PREP!
2 large eggs
2 tbsp arrow root
1/2 tsp salt
Mix all ingredients in a stand mixer.
Flour your work station and knead the dough for 2-3 minutes until it is no longer sticky and comes together in a large ball.
Roll out a piece of dough into 1/2 inch in diameter logs.
Cut the long into 1 inch peices.
Use a gnocchi paddle or fork to roll the gnocchi across to get ridges.
Bring water to a boil and drop 8-10 gnocchi into the water.
After they float to the top, use a skimmer or strainer to receive the gnocchi.
Toss cooked gnocchi with olive oil to precent sticking until your top with sauce and serve.
Repeat until all of the gnocchi are cooked.
Top with sauce of choice. I used my KALE PESTO.
